While it looks contradicting, in Asian countries (India) the approach to eating vegetarian is different. And opening an Indian restaurant, from a chain, in the UAE attracts more customers when serving chicken biryani. Even if there are 'vegetarian' Indians, which might sometimes eat less strict especially for a grand opening.
