I still hope that one day the old Opera source code will be released and some project will resurrect it...

The problem is, the more anti tracking you use the more unique your browser fingerprint becomes.
So either way you're screwed.

So everyone needs to use anti-tracking!

For the uninitiated, how does that work/how does one go about setting that up?

I use a plugin called user-agent switcher to allow me to change my user agent. For proxying, see the network settings in your preferences (currently on the general tab of the settings page, at the bottom, but they've changed this a number of times during Firefox's evolution so I'd expect it to go walkies still). You'll need to have access to a proxy server located somewhere else around the world to know what to put in here. On that page I've also noted I'm running DNS over https to a third party which limits my exposure to my ISP somewhat.
