Actually i dunno the Iphone license so i can say if the gpl one break it.
The only think that i could say that their is NO specific version of Yeti 3D.
In general the port you see is the GPL version with other texture and level that are very easy to change with the editor and tools.
The porting of Yeti 3D is very very fast for people that know their plateforme.
You just need and buffer and map the key and voila and good port
Using the template Yeti 3D could be port in 30 min
The other version is the Pro version i've but that it say with the pb that we couldn't contact the autor so i don't have all the code.
If you want to use Yeti3D you have to start from the GPL code and code the rest
Maybe i'll dev and new engine for mobile device soon for my next project to not loss all the work i've done on Yeti Pro.

Yes for sure.
The best way for Yeti is to use the 3D acceleration of the Iphone.
Easy to remap the function of the poly filler (porter an opengl and opengles easily).
But with the power of the iphone i'll better write more advanced rendering technique (octotree + bsp) using directly the 3D hardware.
Don't forget that when we start the Yeti3D engine the main plateforme was the GBA and the GP32
