I'm listening to lots of medieval/renaissance/baroque/classical/romantic music right now, but I hate most of the more modern stuff (just sounds bad to me).

Aside from that, I like to listen to folk (not country) music and jazz. As well as some Russian bands (my favourite is LYUBE)

Some nice stuff that I found recently:

Trio Norte - A talented instrumental group from Toronto who play Russian and Spanish-themed songs (samples on website)

Arrogant Worms - sort of like Weird Al, except that they make their own tunes. It's hard not to laugh when listening to one of their CDs.

Guitar Islancio - jazz renditions of Icelandic folk songs.
