How much 1Gb ethernet can the omap5432 handle ?

That's the question !

EVM board has one, but i can't find the maximum number on the documentation.

It looks like it can't handle any.

hmm, its a bit confusing, cause after that notice there are tables which describe the performance over eth0... also it seems to be something different:

it says Mbps, the tables say Mbps, its slightly different.

Its only the ti devboard that can't hand 1Gb/s another omap5432 board made by igep can handle 10/100/1000Mbs.

Since Ethernet is not a feature of OMAP5, but done by an USB<->Ethernet hub/bridge (the EVM carries one LAN9730 http://ww1.microchip.com/downloads/en/DeviceDoc/9730.pdf) it is a limit imposed by the USB port. And that is 480 MBit/s for an USB2.0. If some OMAP5 board uses a different interface for Ethernet (USB3.0 oder a parallel interface) it can handle higher speeds.

If you need fast Ethernet on a CPU similar to the OMAP5, look for the TI KeyStone processors: http://www.ti.com/product/am5k2e04 They even have 10Gb Ethernet :)
