If the firmware upgrade files came with a .gpu file, don't forget to run it from the Utilities menu. I remember this caused 2.1.1 not to appear when upgrading from 2.0.0.
The loading screen should say 2.1.2. The info screen will say 2.1.1 (as all the menu files are identical to 2.1.1). I suppose they should have changed the version number there too just to be consistent but it doesn't really matter. You can always change it yourself if you want - it's just a text file at /usr/gp2x/version
If you already had 2.1.1 then you don't need to do the patching part (because all it does is patch everything to 2.1.1). What you need to do is put the kernel img in the root of the card (the only file you need if upgrading from 2.1.1) then boot with start+select pressed.
