I'm also starting to delve into the developing sections of the forums and was thinking about something like that, but you'd very probably beat me to having something usable.
In my opinion it wouldn't be necessary to be able to edit confs (like dboxfe offers), but it might be interesting to have default options in one file and appendices and partial overrides in a second (or third) and being able to cascade them.
Why not throw a PickleLauncher into the DosBox package? I've had the same problem with DBoxFE overwriting my config files, and while the FE has it's uses, I'd almost be just as happy not using the FE at all and just having a simple frontend like PickleLauncher that just selects the .conf files and then I can write them by hand with whatever I want for keyboard mapping files and all that goodness .
