Hello, when I try to run GnuBoy the screen goes blank and takes me back to the main GP2X menu. I have the .gpe file in the following: emulators\gnuboy\

Where are your roms located?
Mine are in "roms > gameboy", unzipped.

Sounds like you have done everything right, I would try re-installing, then if that doesn't work, download the file from the archive again and start form scratch.
