For permanently setting usb0 (in case you do networking via USB-cable), you can modify /etc/network/interfaces as root. If you need more info on that (which I suppose to be unlikely), then let me know or search the internet for that file and search-terms like "usb0" and "mac".
I haven't tried it with wlan0, but it can be configured there too. There is a note though that it explicitly was commented out, because it slows down NetworkManager. Maybe this refers only to some of the out-commented settings.Try it if you like.
