Is it possible to delete the built in games and use that space for games I like better?
Can I just use the finder (mac version of explorer) to copy the folders from the built in memory to back them up and just put them back if I want to play them again? I don't have a card yet and I want to put some games on it (when I get it) and I wanted to put them in the built in memory. So, can I copy the folders to the hard drive (to back them up) and them delete them and put the games in that I want as opposed to the ones that came built in?

Yes you can just delete them.
Will I be able to put them back if I want? Say to put back to factory specs?

Also, is there any software for testing the overclocking ability of the particular unit I receive?\

Yes,

Try using Picodrive, it lets you overclock both cores, not to separate speeds though unfortunately.

Edit: Or there's this utility
