Yes, the Airboard is a good old board. I still have one sitting in the closet as I will always have it for a backup. The two problems with it are 1) the receiver needs to be visible 2) the mouse nub is annoying and not as fast as a touchpad (I use laptops all day so I prefer a touchpad).
I currently use a DiNovo Edge for my HTPC only when I need to do dedicated typing but I use my remote for most everything else. In reality, the Edge sits in the drawer most of the time.
As for VNC, yes you can do that, but there are more elegant setups. VNC would be ok for a dedicated audio server that was headless, but for video and audio, you don't want to see VNC control on the screen.
