SNES - Opensnes9x
Megadrive - GenEmu (FGen's sprites jitter about during scrolling. FGen is faster though with a better interface)
NES - Little John GP
C64 - Frodo
AtariST - Castaway
PC Engine - GPEngine
 
Can you expand your list with spectrum and other classic platforms....thanks ;)
 
Just add to the list and when things change we can amend :)

My list isn't definitive, For example, I don't know much about the Gameboy emulators so I didn't put anything down for that platform. I'll leave that to the experts!! :D

Speccyal'K is the best Spectrum emulator. I have found that some of the features that were added in the last release don't work for me though. Has anyone else found this? I can not get it to save key configurations, and full screen mode doesn't seem to work (thick borders are still visible). The sound is also a bit funny sometimes.

I originally bought my GP32 for Spectrum emulation and I think it is a shame that there isn't yet one as good (in terms of emulation and features) as ZX Advance on the GBA. I think all the existing Spectrum projects on GP32 have died now as there hasn't been any news for a long while.

The good news is that Rlyeh has started work on a Spectrum emu, so we may yet see full speed/sound, tzx support, and a nice on screen keyboard like in fMSX and Frodo.

I haven't had any problems with jittering sprites in Rlyeh's last christmas beta of fGen. Moreover, I was stunned by the fact how good it actually was: all the games that I played ran almost full-speed on frameskip 1, with onlly a few minor problems on some games (menu in Jungle Strike, flashing borders in Micro Machine). All the other games (Sonic 1+2, Shining Force, Sparkster, Ecco 2) ran almost perfect on frameskip 1 on 133mhz. I would say for Genesis fGen is definitely the best. (Can't wait until the first official release (hopefully with sound) will arrive).

For now, as long as Rlyeh's beta has still only been released (semi-)privately, I would definitely go for Rlyeh's fSMS for the Sega Master System.
