Advice on cooking and grocery shopping?

When cooking for one, I tend to simplify and stick to shelf stable stuff. Salt content can be a bit high though.

Bag of Jaipur sauced vedg, a can of chicken, microwave, eat.

Frozen meatballs, can of peas, can of mushrooms, can of cream of mushroom soup. Microwave 2 cups meatballs on high while you open cans to get them thawed. Combine meatballs & vedg in pan, bring to light boil, add soup (dont add water, plenty of that from the vedg). Turn burner down to medium. Stir frequently. Eat when hot. Save half for next meal.

the trick is not only what you eat but how much of it ... if you cook fresh you will probably cook too much of it

get / use smaller plates or cook and freeze stuff in smaller portion sizes helps a lot

for example Japaese Curry https://www.japanesecooking101.com/curry-and-rice-recipe/ is a wonderfully easy dish to cook and freeze in small potions, use whatever vegetable you can get (precut if necessary) and just freeze it in small portions, then when you are hungry cook some rice and heat up a frozen unit
