If you skip the touchscreen and just go for a normal one with the same resolution it will probably be easier and cheaper to find (remember the issues ED ran into while seeking a display?). You'd can still mouse around. Don't forget that the gaming controls are (mostly) really keyboard keys that have been relocated.

Touchscreen is easy.

It's all German as I'm too lazy to look for an English shop but it should be easy to find.

Anyways, I'd rather ask for a Pyra board instead using the Devboard.
Much better support, more Ports/SD-slots, more extras (GPS, UMTS) and upgradeable.
 
I was planning a slightly similar kind of project, but different. I wanted to build an Amiga like case around the OMAP5 EVM devboard. I started building a Pyra like mechanical keyboard using Cherry MX blue key switches and used the same keymat I2C chip the Pyra does to handle the keyboard. Since my devboard still looks like it's broken, I'll need to figure out what to do with what I have finished with the project.
