Two racing games that stand out in my mind are Pole Position (of course) and STUN Runner. I can't tell  how much money I blew on SR alone. I probably should have bought my own arcade machine and saved myself some money!

Top gear - snes
chase hq 1  and 2  - amiga
TurboCharge  - c64
stunt car racer  - c64
Supercycle  - c64
The italian job - psx
lotus challenge - amiga
Test Drive 1,2 - c64, amiga,dos, etc

Stunt Car Racer - Amiga (by far the best version)
Lotus series - Amiga (Part 3 was a little bit disappointing back then)
Enduro - Atari VCS (groundbreaking 2.5D racer)
Slicks - C64 (one of the best overhead racers)
Formula One Grand Prix - Amiga (maybe the first sim, a fast Amiga is recommended)
Night Driver - Arcade (might be the first 3D game, made me begging my parents for lots of Pesetas during holidays in Spain)
Mille Miglia - Arcade (the most beautiful pixel racer)

The titles are in no particular order and I could easily extend the list to more than 50 games.

OutRun (Arcade)
Super Hang On (Arcade)
Burnin' Rubber (GX4000)
Super Sprint (Arcade)
Grand Prix Simulator (CPC)

I love all these even though they are all very similar style racing games, which i hadn't realised before, although they are on mostly different systems,

OutRun 2019 - MegaDrive

F-Zero - Snes

F-Zero: Maximum Velocity - GBA

F-Zero: GP Legends - GBA

Top Gear 2 - Snes

Despite my love for Nintendo, I never really got into the whole F-Zero thing. F1-Exhaust Heat was a better Mode 7 racer than F-Zero IMHO.

Although Mario Kart on SNES was better still :D

As you might guess from my first post here, I was more into computers than consoles in the eighties/early nineties.
Is voting for Top Gear just a nostalgic feeling, because you just knew consoles back then or does anyone really think it's able to be compared to a Lotus title on the Miggy? I mean, come on, nobody wanted to play, see or hear Top Gear after a round of Lotus 2.

One more to the list:
No Second Prize - Amiga (really slick polygon racer, even on a 7MHz Amiga 500)

PS: I didn't intend to be harsh. I know Amigas were quite unpopular in the states, so I guess almost no one there has ever heard of most of its games before the rise of the internet.

I had one (I live in Canada) but there was MUCH fewer in N.America than UK etc
I loved the Amiga, I cant figure out why so many c64 users upgraded to PC's...

I realize it may not be old-school enough for some, but to me Hi-Octane (PC, 1995) is the best racing game, period.
