Will the VLC port play any resolution? Do I need to convert the video to 800x600 or will VLC do that real-time?

VLC will play videos at pretty much any resolution and stretch them to the right size for you, so long as it isn't at or above HD. The size of the video doesn't matter to VLC.

However, you should know that the Pandora's DSP is not currently used, so the Pandora has to play videos strictly through the CPU. This is a bit too much for it with things like 720P h.264 (although a custom version of mplayer has been released which can run 720P xvid videos).

But most videos should run just fine, regardless of format.
